INGREDIENTS:
- 1-1/4 cups olive oil, divided
- 1/3 cup red wine vinegar
- 4 cloves garlic, minced
- 1-1/4 teaspoons sea salt
- 1-1/4 teaspoons ground black pepper
- 1 package BUTTERBALL Smoked Turkey Dinner Sausage
- 1 loaf (16 ounces) ciabatta bread, cut into 1-inch cubes
- 8 small ripe tomatoes, diced
- 1/2 cup chopped fresh basil
- 1/4 cup chopped fresh Italian parsley
DIRECTIONS:
- Whisk 1 cup plus 1 tablespoon of the olive oil, vinegar, garlic, sea salt and pepper until well blended; set aside.
- Preheat grill according to sausage package grilling directions. Cook sausage according to directions to an internal temperature of 165 F. Remove from grill and cut into 1/4-inch thick slices.
- Preheat oven to 350 F.
- Meanwhile, toss bread cubes with remaining 3 tablespoons olive oil. Spread in a single layer on baking sheet. Bake 12 to 15 minutes or until light golden brown and crisp, stirring once. Remove from oven; cool.
- Combine cooked sausage, bread, tomatoes, basil and parsley in a large bowl. Drizzle with olive oil mixture. Toss gently to evenly coat all ingredients. Serve.
