Country Crock Peachy Chicken Summer Skillet

Ingredients
2 eggs beaten
1/3 cup all-purpose flour or gluten free flour
4 boneless skinless chicken breast cutlets, about 3/4-inch thick and 1lb total
salt and black pepper
6 tbsp Country Crock® Original Spread, divided
1/2 cup chicken broth
3 tbsp fresh lemon juice
2 peaches, sliced into 8-10 slices each
1/2 cup fresh basil, torn
Fresh parmesan, for serving
Directions
Preheat the oven broiler. Place the eggs into a shallow bowl and beat slightly with a fork, place flour in a separate shallow bowl.
Season the chicken with salt and pepper. Dip chicken in egg and then flour, tossing to coat. Place the chicken on a plate.
In an oven safe skillet, melt 3 tablespoons of Country Crock over medium heat. Add the chicken and cook until the bottom side is golden brown, about 3-4 minutes. Flip the chicken and add the other 3 tablespoons of Country Crock swirling the melted Country Crock around the chicken. Cook, basting the chicken until the chicken is cooked and golden brown, about 4 to 5 minutes.
Reduce the heat to medium low and pour in the chicken broth and lemon juice. Simmer for 5 minutes. Remove from the heat and arrange the prepared sliced peaches around the chicken. Broil 1 minute, until the peaches are softened.
Grate some fresh parmesan over top and sprinkle with fresh basil to complete the Peachy Chicken Summer Skillet. Enjoy!
