Crispy Feta & Fried Egg Tortilla

Ingredients
1 teaspoon olive oil
2 tablespoons crumbled feta cheese
1 Eggland’s Best egg, Large
1 flour tortilla
1/2 avocado
Dried oregano, to taste
Red pepper flakes, to taste
lime juice, 1 teaspoon
salt and pepper, to taste
Directions
Heat a small frying pan over medium heat and brush with olive oil.
Add the feta cheese in a circle around the pan. Allow the feta cheese to cook for 1 to 2 minutes until sizzling.
Gently crack the egg in the middle of the pan. Season with oregano, pepper flakes, salt (very light or optional) and pepper.
Cook until the feta turns golden/brown and the egg is cooked to your preference, medium or runny. Warm the tortilla on a gas stove or pan. Top with the sliced avocado, drizzle with lime juice and smash with a fork. Carefully top with the fried egg and enjoy!
