Cheesy Quichettes

Ingredients
12 each BUTTERBALL Turkey Bacon
6 eggs
1/4 cup whole milk
11/2 cups refrigerated shredded hash brown potatoes
1/4 cup chopped fresh parsley
1/2 teaspoon salt
11/2 cups shredded Mexican cheese blend with jalapeño peppers
Directions
Preheat oven to 400 F. Lightly coat 12 standard (2-1/2-inch) muffin pan cups with nonstick cooking spray.
Place equal amounts turkey bacon into prepared muffin cups. Beat eggs and milk in medium bowl. Add potatoes, parsley and salt; mix well. Spoon mixture evenly into muffin cups.
Bake 15 minutes or until knife inserted into centers comes out almost clean. Sprinkle with cheese; let stand 3 minutes or until cheese melts. (Egg mixture will continue to cook while standing.) To remove from pan, gently run knife around outer edges and lift out with fork.
