Ham & Egg Bagel Sandwiches with Pesto

Ingredients

  • Salt and pepper, to taste

  • 8 slices Smithfield Spirals Leftover Ham

  • 4 bagels, your favorite flavor, tossed

  • 4 eggs

  • 8 slices Swiss cheese

  • 1.5 cups arugula greens

  • 1/3 cup pesto

Directions

  1. In nonstick skillet over medium heat, cook eggs as desired with a small amount of butter or oil to desired doneness & reserve, holding warm.

  2. In same pan, heat ham slices for 20-30 seconds per side or until highly browned & heated through.

  3. Spread pesto on bagel halves & assemble sandwiches with arugula, cheese & ham, topping with egg. Sprinkle salt & pepper to taste and serve warm for a satisfying breakfast sandwich anytime of the day!
