One Pot Vegan Creamy Pumpkin Penne

Ingredients
4 cups vegetable stock
2-1/2 cups dry penne
1 cup canned pumpkin puree
2 tablespoons tomato puree
1/2 cup Country Crock® Plant Cream
1/2 stick Country Crock® Plant Butter Sticks with Olive Oil, cubed
1/2 cup vegan parmesan cheese, grated
Salt and black pepper
Thyme, for garnish
Directions
In a pot over high heat, add vegetable stock, once boiling, add penne.
Once the pasta is al dente, about 6-7 minutes, add pumpkin puree and tomato puree, mix to incorporate
Reduce heat to low and add Country Crock® Plant Cream, and then Country Crock® Plant Butter and toss penne to coat.
Season pasta with salt and pepper.
Garnish with vegan parmesan and thyme, serve hot and enjoy!
