One Pot Vegan Creamy Pumpkin Penne

Ingredients

  • 4 cups vegetable stock

  • 2-1/2 cups dry penne

  • 1 cup canned pumpkin puree

  • 2 tablespoons tomato puree

  • 1/2 cup Country Crock® Plant Cream

  • 1/2 stick Country Crock® Plant Butter Sticks with Olive Oil, cubed

  • 1/2 cup vegan parmesan cheese, grated

  • Salt and black pepper

  • Thyme, for garnish

Directions

  1. In a pot over high heat, add vegetable stock, once boiling, add penne.

  2. Once the pasta is al dente, about 6-7 minutes, add pumpkin puree and tomato puree, mix to incorporate

  3. Reduce heat to low and add Country Crock® Plant Cream, and then Country Crock® Plant Butter and toss penne to coat.

  4. Season pasta with salt and pepper.

  5. Garnish with vegan parmesan and thyme, serve hot and enjoy!
